I often plan my meals around what will taste yummy as leftovers. I know that sounds funny, but hear me out. I looooove roasted veggies, and they’re even better warmed up the next day! Then having a lean protein leftover from last nights (healthy :-)) meal can make lunch the next day a snap. All you need to add is the veggies!
